The Begali winery is a family-owned estate in the heart of the Valpolicella, where Amarone and Recioto are made. Amarone is a unique wine in the panorama of Italian viticulture: it is a blended, dried-grape wine made from primarily from Corvina, Rondinella, and Molinara grapes. While most dried-grape wines are served as dessert wines in Italy, Amarone is traditionally served with hearty wintery dishes like the famed
pastissada
of Verona, a horse-meat stew. The Begalis' make only small amounts of this wine and its hand-crafted character shows gorgeously with each vintage.
The term
recioto
is Venetian dialect for "ear" (
orecchia
in Italian): the grapes used to make Recioto are taken from the "ears" of the vine, in other words, the top bunches that enjoy the best exposure and become ripe sooner than the others. Recioto, like Amarone, is made using primarily Corvina, Molinara, and Rondinella grapes (each an indigenous variety of Northern Italy). The grapes are dried on straw-mats or in crates for an extended period and then pressed to make this sweet wine. For Recioto, fermentation is stopped so that much of the sugar remains and a sweet wine is created. (For Amarone, fermentation is allowed to continue until almost all of the sugar has been consumed by the yeast.).
