This grappa is made from the pomace of Moscato grapes that have been used to make the Cascina Castle't's classic Moscato Passito by the same name. The term
avié
literally means "vigil" in Piemontese dialect. It is a reference to the sweet wines that the farmers used to drink on nights so cold that they had to stay up all night in order to keep warm. Like the Moscato Passito, this bottles is painted with a woman's handprint, an emblem intended as a trace of women's role in Piemontese winemaking and a nod to the owner Maria Borio.
