Frascati is one of Italy's best-known and best-loved white wines. To sit in a Roman cafe sipping Frascati is certainly one of life's true pleasures. Frascati is named for a town in the hills southeast of the Eternal City. Fabrizio Santarelli of Castel de Paolis took the basic Frascati formula and amped it up by using the kinds of meticulous viticultural methods common to more prestigious appelations. Fabrizio's Frascati is, as per the rules of the DOC, based on Malvasia and Trebbiano with several other native varieties added for extra depth. The wine is vinified in temperature-controlled stainless steel.
